They would use their sabres to knock off the top of the bottle while on horseback. This tradition continues today at some wedding parties and celebrations, minus the horse of course! 

To open a bottle of champagne, just give the neck a strong knock with a sabre and watch the top come off, leaving the neck open and ready to pour.
